Farm-made Saint MarcellinThis is a small cheese with character. It can be made with goat or cow's milk. I have chosen the cow ! It has a fruity flavour, mild, but with a developed character. Its pate is soft and creamy. As a young cheese, it has a firm texture, but as it matures it becomes very creamy, and can even run a bit ! This is actually how lovers of this cheese prefer it !
