Farm-made Saint Marcellin

This is a small cheese with character. It can be made with goat or cow's milk. I have chosen the cow ! It has a fruity flavour, mild, but with a developed character. Its pate is soft and creamy. As a young cheese, it has a firm texture, but as it matures it becomes very creamy, and can even run a bit ! This is actually how lovers of this cheese prefer it !

We sell it in a small ceramic ramekin in order to preserve its creamy texture and to keep it from dying out.


A bit of history..... This cheese is first mentioned in the XV century. An anecdote from that period recalls that the future King Louis XI fell during a hunt in the Lente forest, on the edge of the Vercour and the Diois mountains. He was found and taken care of by two woodcutters who offered him bread and...Saint Marcellin ! Once he became king, he introduced this cheese to his table !

Cheese made from raw milk.

Fat Content: 60%
Dry Matter of Total Fat: 26%

To be accompanied by a Gigondas of a Chateauneuf-du-Pape.
